Heart Shaped Veggie Pizza
1 Tube Ready-To-Bake Pizza Crust
1/2 C. Red Pepper, diced
1/2 C. Matchstick Carrots
1/2 C. Broccoli, chopped
Spinach Dip Topping:
1 C. 1% or Fat-Free Cottage Cheese
1/4 C. Parmesan Cheese
1 C. Frozen Spinach, defrosted
1/2 C. Artichoke Hearts
1/4 C. Olive Oil
1 tsp. Garlic Powder
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
Using a rolling pin, roll out pizza dough, ensuring even thickness throughout.
Use a large heart-shaped cookie cutter to cut heart-shapes out of the pizza dough. Place each heart-shaped piece on lined baking sheet.
Bake for 5-8 minutes, until crust is golden brown. Set aside to cool.
In a blender or using an immersion blender, combine cottage cheese, frozen spinach, artichoke hearts, olive oil and garlic powder. Blend until smooth.
In a medium bowl, use a rubber spatula to combine the blended mixture and parmesan cheese.
Spread about 2 Tbsp. of spinach dip topping on each heart. Then top with red peppers, carrots and broccoli.
Amount of topping needed for each heart and recipe yield will vary depending on cookie cutter size.
