12 Oz. Spaghetti, cooked to Al Dente, drain but do not rinse
4 Tbsp. Butter
1/2 Yellow Onion, diced
4 Garlic Cloves, minced
1 Can Chopped Tomatoes and Chilies, drained
1 Tbsp. Flour
1 C. Heavy Cream
1 C. Chicken Broth
1/2 C. Parmesan Cheese, shredded
1 tsp. Italian Seasoning
1/2 tsp. Salt & Pepper, to taste
1/4 tsp. Crushed Red Pepper Flakes
Parsley, for garnish
Add butter, diced yellow onion and minced garlic cloves to a skillet. Cook on medium high until onions and garlic are translucent, about 2 minutes.
Add chopped tomatoes and chilies and flour to skillet, whisk to combine.
Add heavy cream, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring mixture to a simmer.
Add 1/2 C. shredded Parmesan cheese. Mix until well combined.
Add cooked pasta and chicken to skillet, mix well and continue cooking on low heat for 5-8 minutes or until warmed through.
Serve with extra Parmesan Cheese and garnish with parsley.
