Happy St. Patrick’s Day!

A few years ago, I tried Corned Beef and Cabbage for the first time and found a new comfort food. The combination of Cabbage, Carrots and Corned Beef was fantastic. This year I thought why not try some appetizers for those St. Patrick’s Day parties.

So, if you are attending any or you are planning on having the party at your house here are some great appetizers to share with your guests.

 

Ruben Bites
 
Ingredients
  • 20 red potatoes, small
  • ½ cup Corned Beef, chopped
  • ¼ cup Cheddar Cheese, shredded
  • 1 Tbsp butter, melted
  • 1/8 tsp salt
  • Sour Cream (optional)
  • Green Onions (optional)
Instructions
  1. Fill a large pot with water and bring to a boil. Add potatoes and boil until they are fork tender.
  2. Preheat oven to 400 degrees.
  3. Once potatoes are cooked and have cooled cut each one in half and cut a small slice off the rounded end so potatoes sit flat.
  4. Scoop out the inside of each potato saving insides in a bowl. Add cheese, corned beef and butter to bowl with potato insides. Salt mixture to taste.
  5. Sprinkle salt over potato halves. Add mixture on top of potato halves and place them on a baking sheet. Bake 10-15 minutes.
  6. Remove from oven and serve with a dollop of sour cream.
 
Notes
Sprinkle some green chopped onions on top for flavor and color.

 

Reuben Tortilla Pinwheels
 
Ingredients
  • 8 oz. cream cheese, softened
  • ½ cup Russian Salad Dressing
  • ½ cup sauerkraut (rinsed and well drained)
  • 8 oz. Swiss Cheese, finely shredded
  • 12 oz. corned beef deli meat (thinly sliced)
  • 8 flour tortillas 9” diameter
Instructions
  1. Mix together cream cheese and Russian dressing until smooth and creamy. Mix in sauerkraut.
  2. Spread one side of a tortilla with cream cheese mixture, almost all the way to the edges.
  3. Sprinkle with cheese. Lay a few slices of corned beef on top of cheese.
  4. Roll up tortilla tightly. Repeat with remaining ingredients, laying rolled tortillas on a plate.
  5. Cover each one individually with wrap and refrigerate for at least 1 hour.
  6. Remove from refrigerator and slice into rounds and serve.
