4 xtreme wellness whole grain tortillas or corn tortillas
1 cup black or pinto beans
1⁄2 cup cheddar cheese
½ cup diced fresh tomatoes
¼ cup chopped green onions
Cilantro to taste
2 avocados
4 leaves lettuce
1/2 cup full circle salsa or the donkey salsa
1/2 cup light sour cream or plain fat free Greek yogurt
Feel free to add 93% lean ground beef or 99% lean ground turkey to increase the protein – cook on the stove according to directions and add Mrs Dash taco seasoning
Directions:
Place 1/4 cup beans on each tortilla.
Microwave 30 seconds each.
Arrange 1/8 cup cheese on each tortilla and microwave another 30 seconds.
Layer with toppings and fold
Fried Mac & Cheese Bites
Mac & Cheese:
1 ½ cups elbow macaroni, uncooked
3 tbsps butter, unsalted
1 tbsp all-purpose flour
½ tsp salt
1 cup milk
1 ½ cups shredded cheddar cheese
nonstick cooking spray
Fried Bites:
¼ cup all-purpose flour
2 large eggs, beaten
¾ cup plain breadcrumbs
vegetable oil
Directions:
Cook pasta according to package directions.
Meanwhile, melt butter in saucepan. Stir in flour and salt. Cook on medium-low heat, stirring constantly, until mixture bubbles.
Slowly whisk in milk, stirring constantly, until smooth.
Bring to a boil; reduce to low heat and simmer for 1 minute.
Stir in shredded cheese until melted; remove from heat and fold in cooked pasta.
Spray 6 inch square pan with cooking spray. Spoon macaroni mixture into pan; packing lightly. Chill for at least 1 hour or until cooled.
In 3 separate bowls, place flour, eggs and breadcrumbs.
Cut chilled macaroni into bite size pieces.
Cover each bite size piece lightly into flour, then dunk into eggs and finish by covering with breadcrumbs.
Heat oil on stove or in deep fryer. Fry in batches for 1 – 2 minutes per side.
1 Bag Frozen Sweet Potato Fries, cooked till crispy
1 Bunch Parsley
2 Tbsp Thyme Leaves
3 Cloves Garlic
4 Tbsp Olive Oil
4 Tbsp Red Wine Vinegar
Sea Salt to Taste
Pepper to Taste
Cayenne Pepper to Taste
3 Strips Bacon, cooked till crispy and crumbled (optional)
Directions:
Bake sweet potatoes according to package directions.
Meanwhile, finely mince parsley, thyme leaves and garlic. (for best results, place greens in food processor)
In medium bowl, combine herbs, garlic and olive oil. Whisk in vinegar, salt & spices.
Remove cooked fries from oven and transfer to wide bowl.
Spoon chimichurri over fries followed by crumbled bacon. Serve hot.

1/4 Cup Cooked Small Pasta, Rinsed Drained Chickpeas or Great Northern Beans
Dressing
1/4 Cup Greek or Plain Nonfat Yogurt
1 tsp Honey
1/8-1/4 tsp Chipotle Pepper Sauce
1/8 tsp Ground Cumin
2 tsp Orange Juice
1/8 tsp Salt
Instructions
Combine dressing ingredients in bottom of medium container or small bowl with lid.
Layer salad greens, vegetables, pasta or beans and beef on top of dressing. Close lid securely or cover bowl tightly with plastic wrap; refrigerate until ready to use.
Before serving, shake covered container to coat salad well.
