Comfort Food Recipe – Chili

Chili
Ingredients
  • 2 tsp. Oil
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1 Lb. Lean Ground Beef
  • 3/4 Lb. Beef Sirloin, cubed
  • 14 Oz. Can Diced Tomatoes
  • 1 Can Dark Beer
  • 1 Cup Strong Coffee
  • 12 Oz. Can Tomato Paste
  • 1 Can Beef Broth
  • 1/2 Cup Brown Sugar
  • 3 1/2 Tbsp Chili Sauce
  • 1 Tbsp Cumin
  • 1 Tbsp Cocoa
  • 1 tsp. Oregano
  • 1 tsp. Cayenne
  • 1 tsp. Coriander
  • 1 tsp. Salt
  • 4 Cans (15 Oz.) Kidney Beans
  • 4 Chili Peppers, chopped
Instructions
  1. Heat oil.
  2. Cook onions, garlic and meat until browned.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add brown sugar, spices, 2 cans of kidney beans and peppers; mix well.
  5. Reduce heat and simmer for 1 1/2 hours.
  6. Add remaining 2 cans of kidney beans and simmer for another 30 minutes.

 

Comfort Food Recipe – Goulash

Goulash
Serves: 6-8
Ingredients
  • 1 Lb. Ground Beef
  • 1 Medium Onion, chopped
  • 1 Medium Green Bell Pepper, chopped
  • 3 Garlic Cloves, diced and smashed
  • 8 Oz. Elbow Macaroni
  • 14 Oz. Can Tomatoes, diced
  • 15 Oz. Can Tomato Sauce
  • 15 Oz. Can Whole Kernel Corn
  • Salt and Pepper To Taste
Instructions
  1. Brown meat in large skillet.
  2. Add onion and bell pepper to skillet halfway through cooking.
  3. Drain excess fat from skillet and add garlic; stir.
  4. Boil pasta until al dente; drain.
  5. Add tomatoes, tomato sauce, corn and meat mixture to pasta; mix well.
  6. Season to taste.
