August 4, 2018Jerk Sirloin Steak with Pineapple-Pepper Salad Prep: 20 minutes plus marinating Grill: 16 minutes • Serves: 4 3 tablespoons fresh lime juice 2 tablespoons canola or vegetable oil 2 tablespoons jerk seasoning 1 boneless top sirloin or flat iron steak (about 1-1/4 pounds) 1/2 medium red bell pepper, sliced 1/4 small red onion, sliced 2 cups chopped fresh pineapple 3/4 teaspoon fresh ground black pepper 1/4 teaspoon finely chopped habanero chili pepper Cilantro sprigs for garnish (optional) 1.In small bowl, stir 2 tablespoons lime juice, oil and jerk seasoning. Place steak in large zip-top plastic bag; pour lime juice mixture into bag. Seal bag, pressing out excess air; refrigerate at least 4 hours up to overnight. 2.Prepare outdoor grill for direct grilling over medium-high heat. In medium bowl, toss bell pepper, onion, pineapple, black pepper, habanero and remaining 1 tablespoon lime juice until combined. 3.Place steak on hot grill rack; cook 8 minutes or until outside is browned, turning once. Reduce heat to medium; cook steak 8 minutes longer or until internal temperature reaches 140°F for medium-rare. Transfer steak to cutting board; loosely cover with aluminum foil and let stand 5 minutes. (Internal temperature will rise 5 to 10° upon standing.) 4.To serve, thinly slice steak across the grain; serve with Pineapple-Pepper Salad garnished with cilantro, if desired. August 4, 2018S’mores Ice Cream Pie Prep: 30 minutes plus cooling, chilling and freezing Bake: 7 minutes • Serves: 8 2 cups graham cracker crumbs 1/2 cup butter (1 stick), melted 1/3 cup plus 1 tablespoon granulated sugar 2 containers (1 pint each) Cow Belle chocolate or vanilla ice cream (4 cups) 6 ounces milk chocolate 1-1/2 cups marshmallow creme 2 cups miniature marshmallows 1.Preheat oven to 375°F. In medium bowl, stir together graham cracker crumbs, melted butter and sugar; reserve 1-1/4 cups crumb mixture. With back of large spoon, firmly press remaining crumb mixture on bottom and up side of 9- to 10-inch pie plate. Bake crust 7 minutes; cool completely on wire rack. Meanwhile, refrigerate 1 container of ice cream 15 minutes to soften. Coarsely chop 2 ounces (about 1/3 cup) chocolate. 2.With rubber or offset spatula, carefully spread softened ice cream evenly in bottom of pie crust. Sprinkle chopped chocolate evenly over ice cream; firmly press reserved crumb mixture over chocolate. Freeze pie 15 minutes. Meanwhile, refrigerate remaining container of ice cream 15 minutes to soften. 3.Remove pie from freezer. Spread softened ice cream evenly over first layer. Freeze pie at least 4 hours or until firm. 4.Place marshmallow creme in center of pie. Moisten spatula with hot water, and spread marshmallow creme evenly over ice cream filling to edge of pie crust, covering top of pie completely. Lightly press mini marshmallows evenly over marshmallow creme layer. Loosely cover with plastic wrap and freeze 4 hours or until firm. 5. To serve, preheat broiler with oven rack 4 to 5 inches from source of heat. Broil pie 20 to 30 seconds or until marshmallows are golden brown, rotating pie occasionally for even browning and watching carefully for burning. Break remaining chocolate into pieces and insert chocolate pieces into marshmallow creme around edge of pie. To serve, cut pie with a hot knife. June 30, 2018Strawberry Pretzel Bars Ingredients: 4 Tbsp Sugar 1 Cup Butter, melted  2 Cups Pretzels, finely crushed  6 Oz. Box Strawberry Jello 8 Oz. Cream Cheese, softened  2/3 Cup Sugar  8 Oz. Whipped Topping, thawed 14 Oz. Frozen, Sliced Strawberries Garnish (optional): 1 Lb. Fresh Strawberries 8 Oz. Whipped Topping, thawed Directions:  Combine 4 Tbsp sugar with melted butter. Add to crushed pretzels and mix well.  Press pretzel mixture into bottom of 9×13 pan. Bake at 375ºF for about 10 min. Remove from oven and let cool completely.  Meanwhile, bring 2 cups of water to a boil. Add Jello and stir until fully dissolved; remove from heat and allow to cool completely.  While crust and jello are cooling, combine cream cheese, sugar and whipped topping in a large bowl. Beat until smooth.  Once crust is cooled, spread cream cheese mixture evenly over crust, making sure mixture covers any holes, especially around edges. Place sliced strawberries in single layer on top of cream cheese mixture. Then poor jello mixture evenly over top.  Refrigerate for at least 4 hours, or until jello is fully set.  Before serving, add 12 dollops of whipped topping in a 3×4 grid followed by a fresh strawberry on each dollop. April 22, 2018BBQ Pulled Chicken Ingredients:  3 pounds boneless skinless chicken breast 1 16-oz. bottle BBQ xauce ½ cup Italian Dressing ¼ cup dark brown sugar 2 tablespoons Worcestershire sauce 1 package of buns Directions:  Place chicken breasts in 6-quart slow cooker. Mix together remaining ingredients and pour over chicken. Cook on high for 3-4 hours or on low for 6-8 hours. Remove chicken and shred with a fork. Place back in slow cooker to coat with sauce. April 15, 2018Fried Mac & Cheese Bites Mac & Cheese:  1 ½ cups elbow macaroni, uncooked 3 tbsps butter, unsalted  1 tbsp all-purpose flour ½ tsp salt 1 cup milk 1 ½ cups shredded cheddar cheese  nonstick cooking spray Fried Bites: ¼ cup all-purpose flour 2 large eggs, beaten  ¾ cup plain breadcrumbs vegetable oil Directions:  Cook pasta according to package directions. Meanwhile, melt butter in saucepan. Stir in flour and salt. Cook on medium-low heat, stirring constantly, until mixture bubbles.  Slowly whisk in milk, stirring constantly, until smooth. Bring to a boil; reduce to low heat and simmer for 1 minute.  Stir in shredded cheese until melted; remove from heat and fold in cooked pasta.  Spray 6 inch square pan with cooking spray. Spoon macaroni mixture into pan; packing lightly. Chill for at least 1 hour or until cooled.  In 3 separate bowls, place flour, eggs and breadcrumbs. Cut chilled macaroni into bite size pieces.  Cover each bite size piece lightly into flour, then dunk into eggs and finish by covering with breadcrumbs.  Heat oil on stove or in deep fryer. Sour Cream 1/2 Cup Milk 1/2 Cup Chopped Green Onions 2 Cups Grated Cheddar Cheese 1 Cup Crushed Corn Flakes Salt & Pepper To Taste Preheat Oven To 375ºF Instructions Melt 1/4 cup butter or margarine and pour into 9″x13″ baking dish, then add half of the Mr. Dell’s Potatoes. Ground Beef 1/4 Cup Grated Parmesan Cheese, divided 2 Cloves Garlic, minced 4 Mozzarella Cheese Slices 2 Cups Romaine Lettuce, torn 6 T. Caesar Dressing, divided 4 Hamburger Buns, split Instructions Preheat grill to medium heat. Mix meat, 3 T. of the parmesan cheese and the garlic. Shape into four patties. Grill until the internal temperature of the burgers reaches at least 160 degrees. Top with cheese slices. Continue grilling 1 minute or until cheese begins to melt. July 3, 2016If you want a sweet and sour flavor for ribs this is the recipe for you. I’ve used this same kind of sauce with meatballs and loved them, so I thought it would be great for pork as well. Wow does it give you some awesome flavor! Enjoy… I did! Jayne, Deli & Bakery Merchandising Specialist Team Manager   Grilled Ribs With Sweet & Savory Sauce   Serves: 8 Ingredients 1 Cup Chili Sauce 3/4 Cup Grape Jelly 1 T. Plus 1 1/2 tsp. Beef Flavored Broth 1 tsp. Dijon Mustard 4 1/2 Lbs. Country Style Ribs 3 Cups Water Instructions To make sauce, in 1-quart saucepan, heat chili sauce, jelly, beef broth and mustard over medium heat, stirring occasionally. Heat coals or gas grill for indirect heat. Cut ribs into serving pieces. Place ribs in 4-quart Dutch oven; add water. Heat to boiling; reduce heat to low. Cover and simmer 5 minutes; drain. Cover and grill pork over medium coals 15 to 20 minutes, brushing with sauce every 3 minutes, until pork reaches an internal temperature of at least 145 degrees. June 19, 2016The Hoisin Sauce mixed with barbecue sauce and honey makes this a wonderful glaze. I loved it! This is definitely going to be a regular dinner at our house. Enjoy! Jayne, Deli & Bakery Merchandising Specialist Team Manager Hoisin Grilled Pork Chops Serves: 4 Ingredients 1/2 Cup Barbecue Sauce 1/4 Cup Hoisin Sauce 2 T Dry Sherry, if desired 1 T Honey 4 Pork Chops (1 lb.) 1/2 tsp. Garlic Pepper 1/4 tsp. Salt 1/4 tsp. Ground Ginger Instructions Heat coals or gas grill for direct heat. Mix barbecue sauce, hoisin sauce, sherry and honey in 1-quart saucepan. Cook over medium heat about 5 minutes, stirring until blended. Sprinkle pork chops with garlic pepper, salt and ginger. Cover and grill pork 4 to 6 inches from medium heat 10 to 12 minutes, turning frequently and brushing with hoisin glaze during the last 5 minutes of grilling.
